Notes From Tina
(tina@arthritisinsight.com)
Tina Underwood aka KrissyJo
What a week! I know I am not the only one feeling exhausted right now. But in just a few days it will all be worth it. I hate the weeks before Christmas but I love Christmas Day. Although I grumble about it, I love being woken up by the kids at 5am. "MOM! DAD! C'mon! Get up! It's Christmas! Hurry!" And we all know that HURRY is not in an arthritics vocabulary at 5am! But I'll move just as fast as I can so the day can begin!
I wish each and every one of you a joyous, painfree Holiday.

Ron's Ramblin's
(ron@arthritisinsight.com)
Ron Griffin aka IndyRon
Hi gang, well, here we go.
'Tis the week before Christmas and all through the mall,
Rons Ramblin around with no presents at all.
Santa is there with kids on his knee,
With each of them screaming with joy and with glee.
Rons rushin round with gifts to get galore,
And none that he'd have in any of the stores.
Well, we blew it again on that vow that we made,
There will be no presents on sale now tis sad to say.
We were gonna have it done by thanksgiving we did vow,
But now we must face them with our offerings somehow.
Quick down to Walmart in my truck did I run,
Only to find the gimp spots over run.
I parked in the firelane and put up my blue sticker.
And ran in the door as I heard the clerks snicker.
They knew a man who waited til the last,
To try and find gifts whos time had not passed.
I ran through the aisles, pushing my cart.
Looking for stuff that looked sorta like art.
I knew at that moment that I had met my doom,
As I picked for them each a brand new broom.
I promise myself every year,
That I won't be caught as Christmas grows near,
Searching for something for each of my friends,
But every year it seems I must make amends.
This years the last that I will be caught not standing tall.
Cause now I wish you for this and next year,
Happy Holidays to all and to all a pain free New Year
(((((((((HUGS TO ALL)))))))))))))

Holiday Diet Tips
1 - If no one sees you eat it, it has no calories.
2 - If you drink a diet soda with a candy bar, they cancel each other out.
3 - When eating with someone else, calories don't count if you both eat
the same amount.
4 - Foods used for medicinal purposes have no calories. This includes
any chocolate used for energy, brandy, Sara Lee Cheesecake (eaten
whole), and Haagen-Daz Ice Cream.
5 - Movie-related foods are much lower in calories simply because they
are a part of the entertainment experience and not part of one's
personal fuel. This includes Milk Duds, popcorn with butter,
Junior Mints, Snickers, and Gummi Bears.
6 - Cookie pieces contain no calories because the process of breakage
causes calorie leakage.
7 - If you eat the food off someone else's plate, it doesn't count.
8 - If you eat standing up the calories all go to your feet and get
walked off.
9 - Food eaten at Christmas parties has no calories, courtesy of Santa.
10 - STRESSED is just DESSERTS spelled backward.

Tina's Tips
Arthritis can affect your ability to do even the simplest of tasks. I've heard some people say, "Accept your limitations." I'm not sure accepting them is the way to go. I prefer to challenge those limitations, work around them, finding alternate ways of achieving the same goal. Every week I'll share some tips I've found to work around those annoying limitations and I hope all of you will send in your tips too. We may not be the next Martha Stewart, but sometimes the simplest things can help so much.
Try to ignore the commercialization of the holiday and stick to just a few gifts, just a few cookies. Less is sometimes better and allows more time for visiting with friends and enjoying the love of our families. Preparations can be exhausting for anyone and especially those of us with arthritis. Something I read about years ago, but have never tried is a decorating circle. You and your closest friends have mini parties, one house at a time and obviously on different days, to decorate. With 3 or 4 people, it doesn't take long and the added bonus is a wonderful time with your friends.-Linda
Make sure there is no ice build up on your steps or decks, that holiday guests will be using to enter your home. Be sure all your handrails are also secure. I myself have slipped many a time on my pressure treated deck and leave this suggestion to avoid such a mishap. It really hurts.-Case

Cooking With Char!
char@arthritisinsight.com
Char Le Fleur
Well, it is snowing in Iowa again. We have 2 ft. + on the ground now. But that is OK. It was a dry summer, and we need the moisture.
Christmas is nearly here, but what is Christmas without cookies? I used to make sugar cookie cutouts and decorate with icing, but because of the arthritis in my hands, this can be very difficult. But I find that using colored sugar, and colored sprinkles, and assorted "decorations," it is easier and STILL fun!
Now here is a cookie recipe, you are going to want to use all year! From an avid reader, Dale.
Choose a Cookie Dough
* Please pick a flavor before you start baking because some ingredients will vary depending on which of the seven versions you choose. *
Basic Ingredients:
2 1/2 cups flour
1/2 cup shortening
1 cup packed brown sugar
1/2 cup butter
1/2 cup granulated sugar
2 eggs
1 tsp. Vanilla
1/2 tsp. baking soda
Variations:
Fruit Oatmeal Rounds: Prepare dough as directed below, but substitute 1 cup of rolled oats for 1 cup of flour. Stir 1 tsp. of ground cinnamon into the flour mixture. Also, stir a 6 oz. package of mixed dried fruit bits or raisins into the dough. Bake as directed.
Peanut Butter Buddies: Prepare dough as directed below, but add 1/2 cup peanut butter along with the eggs and vanilla. Also, stir a 12 oz. package of peanut butter chips into the dough. Bake as directed.
Malted Milk Treats: Prepare dough as directed below, but substitute 1/4 cup instant malted milk powder for 1/4 cup of the flour. Also, stir in 1 1/2 cups chopped-up malted milk balls into the dough. Bake as directed.
Macadamia Mania: Prepare dough as directed below, but stir 2 cups of coarsely chopped white chocolate baking bar and 3 1/2 oz. of macadamia nuts, coarsely chopped, into dough. Bake as directed.
Double Chocolate Delights: Prepare dough as directed below, but substitute 1/3 cup of unsweetened cocoa powder for 1/2 cup of the flour. Also stir a 12 oz. package of semi-sweet chocolate chip pieces into the dough. Bake as directed.
Chocolate Candy Cookies: Prepare dough as directed below, but stir 2 cups of candy-coated milk chocolate pieces into the dough. Bake as directed.
Super-Chunk Chippers: Prepare dough as directed below, but stir 1 cup of coarsely chopped semi-sweet chocolate, 1 cup coarsely chopped milk chocolate and 1 cup chopped pecans into the dough. Drop dough from a 1/4 cup measuring cup about 4" apart onto an ungreased cookie sheet.
Flatten the cookies slightly with a spoon. Bake for 13-15 minutes or until the edges are lightly browned. Makes 18 cookies.
To make any variation in advance: Wrap the dough in freezer wrap and freeze for up to 6 months. Before baking, thaw dough overnight in the refrigerator. Bake as directed.
Basic Directions:
1) In a large mixing bowl beat the shortening and butter with an electric mixer on medium to high speed for 30 seconds. Add the brown sugar, granulated sugar and baking soda. Beat until fluffy. Add eggs and vanilla; beat until combined. Beat or stir in flour. Use the dough immediately or cover and chill for up to 24 hours.
2) Drop slightly rounded tablespoons of cookie dough 2" apart onto an ungreased cookie sheet.
3) Bake at 375 degrees F for 10-12 minutes or until the edges are lightly browned. Remove the cookies and cool on a wire rack. Makes about 48 cookies.
And last but not least, from our friend Donna, without whom, I would have had to really struggle with my holiday columns. Thank you, dear friend.
Sugar Cookies
1 cup Imperial margarine
2/3 cup sugar
cream thoroughly
1 beaten egg
2 1/4 cup flour (or a little less) LOL Mom's words
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla
add these 5 ingredients to the creamed mixture
Chill and roll out thinly (the thickness is important)
Bake at 375
Now here comes the best part and it makes the cookie. I can't really give you measurements, so here goes.
1 stick of Butter
Powdered Sugar
Vanilla
Use softened butter, add powdered sugar and vanilla, mixing throughly until you have a spreading consistency. Do not make it thin. Spread generously on the cut out cookies and enjoy!

A Closing Thought
Yes, Virginia, There Is A Santa Claus
Editorial Page, New York Sun, 1897
Editor: Francis P. Church
We take pleasure in answering thus prominently the communication below, expressing at the same time our great gratification that its faithful author is numbered among the friends of The Sun:
Dear Editor---
I am 8 years old. Some of my little friends say there is no Santa Claus. Papa says, "If you see it in The Sun, it's so." Please tell me the truth, is there a Santa Claus?
Virginia O'Hanlon
Virginia, your little friends are wrong. They have been affected by the scepticism of a sceptical age. They do not believe except they see. They think that nothing can be which is not comprehensible by their little minds. All minds, Virginia, whether they be men's or children's, are little. In this great universe of ours, man is a mere insect, an ant, in his intellect as compared with the boundless world about him, as measured by the intelligence capable of grasping the whole of truth and knowledge.
Yes, Virginia, there is a Santa Claus. He exists as certainly as love and generosity and devotion exist, and you know that they abound and give to your life its highest beauty and joy. Alas! how dreary would be the world if there were no Santa Claus! It would be as dreary as if there were no Virginias. There would be no childlike faith then, no poetry, no romance to make tolerable this existence. We should have no enjoyment, except in sense and sight. The external light with which childhood fills the world would be extinguished.
Not believe in Santa Claus! You might as well not believe in fairies. You might get your papa to have men to watch in all the chimneys on Christmas Eve to catch Santa Claus, but even if you did not see Santa Claus coming down, what would that prove? Nobody sees Santa Claus, but that is no sign that there is no Santa Claus. The most real things in the world are those that neither children nor men can see. Did you ever see fairies dancing on the lawn? Of course not, but that's no proof that they are not there. Nobody can conceive or imagine all the wonders there are unseen and unseeable in the world.
You tear apart the baby's rattle and see what makes the noise inside, but there is a veil covering the unseen world which not the strongest men, nor even the united strength of all the strongest men that ever lived could tear apart. Only faith, poetry, love, romance, can push aside that curtain and view and picture the supernatural beauty and glory beyond. Is it all real? Ah, Virginia, in all this world there is nothing else real and abiding.
No Santa Claus! Thank God! he lives and lives forever. A thousand years from now, Virginia, nay 10 times 10,000 years from now, he will continue to make glad the heart of childhood.
