Cooking with Char

Breakfast:


Breakfast Burritos
Crumble and brown breakfast sausage in a skillet-drain
Add chopped onion and green pepper to skillet-cook until onion is translucent
Add beaten eggs to skillet
Stir until eggs are firm (or however you like your scrambled eggs)
Remove from heat

Spoon this mixture into warmed flour tortillas
Sprinkle with shredded cheddar cheese (or other cheese you prefer)
Fold up one end of tortilla then fold over each side (leaving top open)
Serve with salsa of your choice.
Make as many or as few as you like.

NOTE-I often make these ahead and put them in the freezer in individual sandwich bags. Then whenever my husband wants one for breakfast, he has them already made. He even sometimes likes to take them in his lunch. They reheat quite well in the microwave.

Homemade Hashbrowns
Wash whole potatoes
Run through your food processor, using you shredding blade (You don't even have to peel them!)
Heat a skillet with a good coating of oil in it (1/4 inch or less is enough)
Add shredded potatoes
Fry till golden brown and crispy
Turn (This is the tricky part. I often use my spatula to cut the potatoes into manageable size pieces.)
Brown other side.
When potatoes are tender inside and brown and crispy on the outside, they are ready to serve.

NOTE:You can add onion or green pepper to shredded potato mixture for a little variety.

Spammeled Eggs
Yep! You guessed it. Scrambled eggs with SPAM. HEY! Don't knock it till you've tried it!

Add diced Spam and a small can of sliced mushrooms (drained) to beaten eggs in a skillet. Cook till eggs are done.
