Quick Tofu Fetta | Arthritis Information

Here is a recipe I promised to post ages ago - it is really excellent. It comes from Bryanna Clark Grogan's recipe book 'Soyfoods for a Positive Menopause'. She has a website and has published many recipe books containing other excellent vegan recipes.

Quick Tofu Fetta
(can be made in microwave)
6 oz firm tofu crumbled - not the silken tofu
1t agar powder (or 2T flakes) I always use powder which is obtained from health food shops or Asian supermarkets.
2T water
1/2t unbleached sugar
1T neutral tasting cooking oil
1 and 1/4t salt
1/2T light miso - I use the white miso & use 1T
3T fresh lemon juice

Blend tofu, agar, water, sugar, oil and salt in food processor until very smooth. Place mixture in heavy bottomed small saucepan and stir over medium heat until it bubbles for a few minutes and thickens.
Microwave option; place in microwave safe bowl and microwave on High 2 minutes. Whisk briefly. Microwave 1 minute more.

Whisk the miso and lemon juice into cooked mixture - add last as lemon juice stops jelling of agar if cooked with it and you want to preserve the enzymes in the miso.

Pour into flat container, cover and chill until firm.
This doesnt take very long to firm up. Cut into squares.
To store make a fairly salty brine of water and salt (about 1T salt per cup of water) boiled together 5 minutes, cool and pour over chunks of the cheese to cover.
Keeps several weeks in refrigerator.
I dont store it in brine, I put it into a sterilised jar and cover with extra virgin olive oil, add whole black peppercorns, garlic, basil, thyme, rosemary etc and leave a few days for flavours to infuse. Keep tofu always covered with olive oil so air cannot get at it.
Not sure how long it lasts like this as it is so delicious it gets used up very quickly.

That is why I appended "with fish", and it's because I wouldn't be going vegan (with fish) for environmental or animal rights reasons, but for health ones. I'm thinking vegan with fish for protein and omega 3s might be the optimal diet for RAers, or maybe gluten free. We sahll see! I don't mean any harm by it. And I'm certainly not one that ever makes a big deal about it (I'm a pretty laid back vegan). But a lot of vegans don't care for people saying they're vegan when they're not, that's all. The animal rights part of it is what defines veganism.Well, I'm just using the word vegan to describe a diet with no dairy or meat, but then I'm going to have it with fish. So until they come up with another word for a diet that is no dairy or meat that's not political, or they think of another word to describe a political vegan, I guess I'll just have to live with their discomfort, because I'm not willing to always say a "diet with no dairy or meat that is not fish" when "vegan with fish" is available. I know many vegans who could not care less if I say "vegan with fish", don't know any that would care,  and  I have not even adopted this diet yet so I don't see it as being a huge issue. But I applaud your sensitivity (while defending my lack of it in this particular case).

Oh, well ok then.

That diet is called no animal products except fish.

But YOU'RE right.
