< =text/>_popupControl(); Sheeesh...can't sleep once again so here I sit quietly typing lol.  It's Sunday!!  Sundays are meant to sleep in!! 

Hope everyone has a nice lazy Sunday.  Spaghetti for Sunday dinner tonight. 

Supposed to be nice and sunny today with scattered frost tonight.  Maybe I can talk Danny into dragging me to the beach today.  I need to go to my thinking place.  I just want to sit in my moon chair and listen and watch the waves crash on shore.

Morning all, Liz, the beach sounds like the perfect place for this pisces to be.  Would love to join you. 

We're still in Tucson.  Decided to stay an extra day and enjoy the city.  We rode around yesterday, stopping in some of the parks and shops, drove around some of the older neighborhoods, and had a leisurely dinner at a wonderful place, The Old Pueblo Grill.  We will be returning again to stuff ourselves full of great food.  I'm writing a column for a Mexican newspaper about restaurants.  My latest twist is restaurants to go to on your way to Mexico.  I'll do a review on this one for sure.

We'll leave Tucson later today, return to Yuma till Thursday, then we're back to Tucson for 3 days and we'll do the museums and old downtown then.  After Tucson I think we'll be headed to Tombstone and Benson.  Not sure those plans could change on a whim. 

After yesterday's running around I was too tired to even hit the hot tub.  Our RV site has a hot tub - I'm not sure how we rated but it's really nice to have so close by.  I slept for 7 hours straight, no pain to speak of.  Got up this morning and am a lot less achy and pain is less.  Don't know if it's the extra 2mg. of Pred. or if the Sulfasalazine is starting to work.  Who knows, I'm not going to question it - just enjoy it. 

The cats were tearing around the RV at 4 this morning.  When you have 3 twenty pound cats running in a 32 foot space it can be a little annoying. Well, I found it cute but Mr. Grumpy that was still sleeping found it annoying!! 

I'm waiting for sunrise over the mountains.  Am going for a stroll and salute the sun.

Lynda, I think the traveling is very good for you.  You sound like you are having a ball.  I am so glad.  Just don't get too tired.  Can you post pictures or are you taking any?

Shel, I am having a great time or should say that we're having a great time.  Traveling is good for me but there are times that it takes it's toll on my body and we have to be stationary for a month or so.  Like this summer when I had my knee replaced.  We were stuck in Yuma for 8 months getting all my medical crap done.  That's why we're so excited being back on the road now. 

I always take loads of pics but I've been lazy and haven't learned how to post pics.  Once I teach myself how to do it you may beg me to stop posting them.  I promise that once I get settled down again Dec. 1st that I'll learn my photo program and how to post pics.  I can email them to someone that knows how to post and they could post them for me until I learn.  We'll be settled Dec. 1st for 3 months and I want to scan and organize our pics.  Lindy

Goodmorning...Gonna be getting ready for the wake here soon.  We went to the private veiwing last night and thats where it hit me.  My 2 cousins didnt go so I was able to keep Kelsay at the house.  Which I'm glad I was able to do.  My dads gf and I made postor boards w/ pictures on it,  We did 5 of them!  We found a lot of good pictures of Grandma.  It going to be a long day today.  Kelsay has been doing pretty well actually, shes had her moments cause she hasnt been the center of attention but nothing to bad.

Well, our boys have survived their first sleepover.  The husband is going to get them right now.

Trick-or-treating is this afternoon from 2PM-4PM; I've got about 10 pounds of candy.  What doesn't get passed out will be fed to the vultures in my office... we don't eat much candy in this house, and the boys will have their own stash from trick-or-treating.

I've got a backlog of school board videos to process and I'm going to try to get through it today after church while the boys go to my dad's house and cut the grass.

I'm feeling pretty good these past couple of weeks, which worries me... I have a rheumatologist appointment in 3 weeks and I don't want go there feeling like a million bucks, you know???  At least I have 3 months of tracking charts to show her.

Hi Lindy. I am south of Tucson by some eighty miles and about 4,000 feet higher in elevation. I did not stroll to salute the rising of the Sun this morning, but I did greet and later today we are going to Tombstone for lunch.

Hi all, out to the beach this morning. Lovely!, sun on the waves, dolphins frolicking in the surf (honestly), some guy with a camera out there and a dolphin jumps past!, whattta place this Calif coast is. Going out for more paint, must!, keep my husband well stocked. (anything he wants I'll buy to fix up this old condo, feel like I'll live here forever). Hope you are all doing well.

Hey Guys! Just woke up about 39 mins ago. Tried to sleep, but the fire alarm kept beeping and then hubby kept snoring and then son came into our room and I had to make him go back to his bed. And then after all of that... my right hip started hurting again.

I guess we are going gorcery shopping. Needs some food for the week and for me to eat while hubby is gone to work. I might give into an electric shopping cart, not sure yet. Depends on how bad my right leg is bothering me. I just refuse to be a "Dear Valued Disabled Customer". Yes, people I know I am but, not everyone else in the bulding has to know that.

Anyways... soo.... that is my day.

You mean they will fire ya! That is what I ask hubby... "You gonna fire me now?" And then he looks at me crazy wondering what I am talking about, then I have to explain it to him.... because I missed so many days of "work" aka laying in bed doped up on muscle relaxers & pain meds.

Oh... when I was sitting in the RD's office last week. They got a fax from a patient. The fax said "I am in pain. Need pain meds NOW!!!!" One of the ladys read it to the receptionist and then asked her what she should do about it, the receptionist said "Go give it to her!!" She was a new girl.

I used reduced fat bisquick, and didn't have any evaporated milk, so I used fat free half and half. Everything else, I just eyeballed instead of measuring. LOL

Oh well, at least the house smells good!

Well, last year I thought I would buy pie crusts instead of making them(once in 19 years of marriage)...well, DS thought I was trying to KILL him.  What is that?  I can't eat that..it hasn't touched the counter. 

So, at Christmas time the first question he asked...are you gonna buy those crap crusts or make your own?  Yep, made my own.  Can't get away with crap around here!

Its a hoot, she will do this and serve it up to the family and then admit she made a 'few' changes to the recipe.

My mother used to make the BEST pie crusts.  They would just disolve in your mouth.  I make the worst, concrete pie crusts in the world.  I always buy ready made ones even though they don't taste the best, they taste better than mine.

Well, lucky Lynda...gettin' away with fake pie crust! 

I am not a huge fan of pumpkin pie...hubby and son like it enough to make one. 

I make a chocolate brownie pie with pecans, and mmmmmm....mmmm!  I also make an apple pie...ya know the kind that weigh ten pounds, and the standard pecan pie.  So, we have dessert company for weeks.

You guys have had a cooking and cleaning fest.  Must be the fall weather.  I had a Gourmet magazine out and leafing through it for Thanksgiving ideas and recipes.  It's several years old and I kept it for the art work but some delicious sounding recipes.

Have any of you tried the Double Layer Pumpkin Pie?  Everyone that I have served it to wants the recipe.  It is very good, almost fat free and low on sugar, so it doesn't get much better than that.  And you don't have to cook it!!  YMMMM! I have a recipe fopr some pumkin thing that's really good....it's super easy and a big hit around here.  You just put pumkin pie filling in a baking dish, sprinkle a whole box of yellow cake mix over top and then top it with pecans.

 

Link, do you add water to that?  I do another cake like that in the summer with rhubarb and strawberries.

K, I may try that for one of hubbies many dessert thingies this holiday season.

 I've heard a pumpkin cheesecake is really good, anybody try it? Hubby loves pumpkin, me, not so good. Love pecan pie yummm!

My favorite dessert is brownies.  Preferably with pecans (not too many), and a light dusting of powdered sugar.  No frosting, no chocolate chips/chunks/whatever... just brownies.

Christopher got in around 4:00 am. He called me around 3:00 to say they were playing poker and he'd be home in a little while. Of course I couldn't sleep until I heard the front door open. What kind of wine do you drink Gale? Can you drink it much with your meds?

I like red wine, but I can't handle it.  3 glasses and I can harld7 walk, and it leaves me hangin.  Now and then I have one glass though.I like red wine, but tonight I'm having a glass of white. No, I rarely drink any alcohol because of my meds...maybe one glass of wine every couple of weeks.Link, didn't you say you have a wine cellar? That would be soooooo cool!

I do not have them on my computer in a text file, but will type them up over the next couple days and PM them to you...I type very slowly! *LOL*I've baked pumpkin seeds before, but it was years ago. I remember thinking they weren't all that. Much easier to buy them!

Yes we have boiled peanuts everywhere and I despise them, they are nasty! They are tough and all the taste is boiled out of them. yuk!

The fact that you're responding to the RA meds would lead one to believe it probably is RA. Have you talked to your RD about your concerns? Do you have any erosions or joint damage?

No, damage to my joints, but it all slammed me suddenly, not a slow build up of symptoms like other people often have.

But Gale, don't you think that those meds would stop inflammation regardless of whats causing it?  I mean, isn't it always you're immune system that does cause inflammation?

Link, I struggle with those same issues. I'm sero-negative also, but run very high CRP and sed rates. I also have erosions in my feet and hands, and LOT'S of joint damage. Yet I still have times when I think I've been misdiagnosed.

According to my RD however, if it wasn't RA I wouldn't be responding to the RA meds.

Oh i called my baby today. He is 25 and lives in florida. He said if he was taking care of me i'd have to eat grilled cheese. I said we would order out. I love both my children. They love each other also. But i have a good son and bi polar son, I am trying not to call him bad but he can be a little wild some times. My baby is just a smart relgious little boy. 6ft 1in. Now, THAT I do have a recipe for!

Candy Corn

1 cup sugar
2/3 cup white corn syrup
1/3 cup butter
1 tsp. vanilla
2 1/2 cup powdered sugar
1/4 tsp. salt
1/3 cup powdered milk
food coloring

Combine sugar, butter, and corn syrup in pan and bring to a boil stirring constantly. Turn heat low and boil 5 minutes. Stir occasionally. Remove from heat and add vanilla.

In a separate dish, combine powdered sugar, salt, and powdered milk. Add all at once to the mixture in the pan. Add food coloring if desired. Stir until cool enough to handle. ShapeHe is not bad he just likes to get in the wine sometimes.

Once the kneading is done the candies "go together" without too much work. It has beem a log time since I formed the corn-shapes, usually I just "braid" the candy ropes together and cut them into sections.

Happ, those cheescakes sound delicious, I love cheesecake, especially with a special crust. I know I don't post alot on the daily chats, but I usually read what everyone is up to. Maybe you could post the recipes into the chat, because now I am wishing I had pumpkin cheesecake. There's a bakery on the way to Grandma's house that sells a baked pumpkin cheesecake they call "Harvest Cake". We pick on up on the way at Thanksgiving. Oh yeah, maybe I won't take the pumpkin roll, I'll pick up a Harvest cake.Good night everyone, gotta go now. Pardon the formatting and spelling errors...

2 cups gingersnap cookie crumbs
2/3 cup chopped pecans
3 tablespoons plus 3/4 cup sugar
6 tablespoons butter, melted
3 8-ounce packages cream cheese, softened
3/4 cup brown sugar
5 large eggs
1 15-ounce can pumpkin
1/4 cup whipping cream
1 tablespoon pumpkin-pie spice*

Caramel Sauce (see recipe)
Garnish: toasted walnut halves

Preheat oven to 350 degrees. Place cookie crumbs, walnuts, and 3 tablespoons sugar in a food processor and pulse 3 or 4 times until combined; add butter and pulse 4 or 5 times, or until crumbly. Wrap the outside of a 10-inch springform pan with aluminum foil, then press cookie mixture into the bottom and 1 inch up the sides.

Bake 8 to 10 minutes. Cool crust completely on a wire rack. Reduce oven heat to 325 degrees.

Beat cream cheese with an electric mixer at medium speed 3 minutes, or until creamy. Gradually add brown sugar and the remaining 3/4 cup sugar, beating 4 minutes, or until blended.

Add eggs, one at a time, beating just until yellow disappears. Add pumpkin, whipping cream, and pumpkin-pie spice. Beat on low speed of an electric mixer just until blended. Do not over beat. Pour batter over prepared crust.

Bake 1 hour and 15 minutes, or until almost set--with a little jiggle still in the center... Remove from oven; run a knife around edge of pan. Cool on a wire rack 1 hour. Chill 8 hours or overnight. Garnish with walnut halves and serve with Caramel Sauce.

Caramel Sauce
1/2 cup butter
1 cup firmly packed brown sugar
2 tablespoons light corn syrup
1/2 cup whipping cream

Melt butter in a heavy saucepan over medium heat; add brown sugar and corn syrup, then cook, stirring constantly, until mixture comes to a boil. Gradually add cream, stirring constantly. Cook, stirring constantly, until mixture comes to a boil. Remove from heat. Lindy…I do miss the sun coming up over the mountains.  We lived right where we had a perfect view of the sunrise every morning.  Have you been up Gates Pass out by Old Tucson?  I love it out there.  Wow…those are some BIG cats lol.  You are writing an article for a Mexican newspaper?  Are you fluent in Spanish??  I could really use some tutoring hints to help Arielle with her 2nd year Spanish. 

 

Shannon…hang in there sweetie.  You are doing just fine.  Remember what I told you before…the right words will just flow out of your mouth when you are talking with Kelsay about all of this.  You are a superb mommy and it will come naturally for you.  Also remember that our kids are stronger than we think they are.  You guys have each other to make it through this.

 

Jaz…we had trick or treat today also.  Only from 2-4PM.  Danielle still managed to bring home a good amount of candy.  I understand the WHY behind doing trick or treat on the weekend and really keeping it time limited.  I just don’t like it.  I miss the old days of running home and getting out there and trick or treating til like 10pm.  The way they do it where I live kinda takes away from the whole concept of Halloween.  The spirit of the day is missing. 

 

Mona…I hate Monday cleaning!!  Well, when I was able to do Monday cleaning lol.  Now that I can’t really do it, I am a total nag on the weekends to keep the house clean.  Mona…I didn’t realize you like candy corn so much!!  I do too!!  I love that stuff!!  I *horde* it.  I hide it from the kids!!  I am really bad about that lol. 

 

I have never had mincemeat pie.  What exactly is it?  Next weekend I am going to teach my daughter how to make pumpkin pie.  She is already asking to do Thanksgiving dinner herself.  I am not too sure about that.  I don’t care if I can’t get around too much or if everything I do exhausts me, I am still going to try and do Thanksgiving dinner myself.  I make a really good turkey and I am not ready to give that task up to my daughter.  Even though she is a very good cook and has a natural talent for it.  I do let her help out, but doing the whole meal, I don’t think so lol.  I do not make my own pie crust.  I buy those because I could never ever make a decent crust!  Got any hints for me Shelly?  I can always have my daughter roll it for me.  Shelly…could you please PM me the recipe for your chocolate brownie pie?  I will not be putting the pecans in it though as I am allergic to them. 

 

Oh that is so sad about that beach house burning down.  What an awful thing to happen!!

Happ!!!!  I LOVE YOU!!!!  Thank you so much for the candy corn recipe!!!  My girls are like…daaaaaaaaaaaaad go to the store tomorrow before work (he works 2nd shift) and get the ingredients for the candy corn!!!  Happ…what a great talent you have!  My 15 year old daughter has a natural talent for cooking that we really encourage in her.  She was going to go to culinary school after high school, but she has changed her mind and wants to go into elementary education instead.  Either career choice she goes with she will be good at.  She loves kids and has a natural talent for working with them.  The girls babysit special needs twins that will be 4 in December and do a wonderful job at it.  Thheir parents only trust the twins with grandparents and our girls.  Sorry…had to do a mommy brag there for a minute!  LOL!!  

 

Milly I agree with Mona.  You can not self diagnose.  It can cause you more harm than good.  Just go to the doctor.  A normal white cell count is 10.  Mine hovers in the 12-13 area all the time and I am fine.  Please forgive me, but I can not for the life of me remember if you have been diagnosed with RA or are still waiting to be diagnosed with RA.  It’s all this brain fog I have from this insane flare I am going through right now.  All this stressing that you may have some weird fatal disease and something new wrong with you every single day of the week is not good for you if you have RA.  The stress can make you flare.  Maybe take a few days to just rest, relax, and stay away from the computer and this self diagnosing stuff.  You would be amazed how your body calms itself down if you are not stressing out.  Stress can cause all sorts of icky physiological changes in the body that go away with just a little R&R.  RA can cause you to have what I call “spin off” diseases, but most of those are pretty common things.  Like hypertension, thyroid issues, depression, asthma, and really just some basic very treatable auto immune stuff.  RA very rarely causes all this stuff you are trying to diagnose yourself with.  [QUOTE=milly]And maybe i have a blood clot? I never did make it to the beach today.  I had a really cruddy RA day.  Danny works 2nd shift so I can still make it there sometime this week.  Cruddy RA days happen and today was just my day for one!  Danny and Arielle made a library run for me today so now I have some new books to keep me occupied when I get tired of the TV and can’t be online too much due to the RA.  I did get out this past week and I am happy and very grateful for that.  Plus we finally got the new to us car and we are loving it!  I am so happy with the nice smooth ride and not being bounced around in the Trooper.  I do love our Trooper and going 4 wheeling is soooooo much fun, but I really needed a car with a smoother ride.  Plus this car will be easier to teach Arielle to drive on.  She is learning to drive with a stick shift car lol.  Poor kid….she has no choice as the Subaru and the Trooper are both stick lol.  But she will be able to drive anything so there is the silver lining in the cloud of learning to drive on a stick lol. Sorry this was so long but I was down and out today but still wanted to get on and check if everyone was doing ok and how everyone’s day went.

One more question, wrap the outside of the pan, is that so it bakes more evenly, I've never wrapped the outside of a cheesecake before, but have had some uneven baking results, i.e cracking or not being done in the middle.

Sometimes when the butter and sugar in the crust get hot and start to sizzle the oil leads out of the springform pan and create a greasy, smoky mess in the bottom of the oven.

Traditionally, it was ground fruits and finely minced suet cooked together. This is my current favourite recipe: it is superb in fruit cake and/or coffee cake.

4/5 cups chopped unpeeled apples (I like Granny Smith-typoe, but whatever is on sale at the market works just as well)
2 cups Raisins, chopped
1 cup cut-up dried apricots
2 cups apple juice
1/4 cup Honey
1 teaspoon Ground allspice
1/2 teaspoon Salt
1/4 cup brandy or calvados

Put it all into a heavy sauce pan of a Dutch oven, slowly bring it to a boil, reduce heat to simmer, cover and cook for about an hour, stirring gently as the spirit moves you. Uncover and continue to cook until the liquid has almost evaporated, stirring occasionally, stir in the brandy, cover the pot and allow to cool to room temperature, ladle into sterilized jars and keep in refrigerator.

I just cook when i cook. Seldom use recipes. I get pretty creative. Like black bean soup. Or i grew a bunch of zuccinis and made a fantastic chicken parma. This really  great cook used to teach me when i was a kid. She said recipe? Well follow me around with a pen and we will have one. I too lerned that a pinch was what "fit" between my thumb and forefinger, and that a cup could be measured in "cup" made by holding your two hands together. Recipes, at least from my subjective POV are the starting place...and they provide a way for people to communicate.

It has been my experience when people discuss food their moods soar, they smile and their whole outlook improves, even if it is just for a moment.
