Hey, ladies and gents! I was going to scour the internet for recipes for sweet potato pie, but I figured I'd hit you guys up first since you always have great recipes at hand.

The first thing I do with my sweet potatoes is bake them.  If you bake them then they get that rich flavor. 

Sweet Potato Pie 10in. pie crust

4 baked medium sweet potatoes

3 large eggs

1/4 teas. ground nutmeg, cloves, allspice and ginger

2 Tablespoons of vanilla extract

5Tablespoons of Maple syrup

1T Honey

6oz cream cheese

1/4 cup of orange juice(fresh squeezed if you have it)

Preheat the oven to 350 degrees.  Spray a 10 inch round pie pan. Peel potatoes then put them in a large mixing bowl and mash them with a fork or masher.  Whip all the rest of the ingredients together in that bowl, scraping the sides if necessary.  Pour into the pie crust and bake for 30-45min.  or until the center of the pie is firm and not sticky to the touch.  Allow the pie to cool 30 min. and then store in the refrigerator. 

Sweet Potato Casserole

3 medium sweet potatoes baked and peeled

1 c sugar

1 stick of butter or marg.

2 eggs

1 T vanilla

1/2 c raisins(I usually use currents)

Topping:

1 c brown sugar

1C chopped pecans

1/3 c flour

1/3 c. butter or marg.

Mash the sweet potatoes until smooth.  Add sugar, butter, eggs vanilla and raisins.  Press into casserole dish.  Mix together the topping and spread over the top of the sweet potato mixture.  Bake for 30 minutes at 350. 

There you go.  I hope you enjoy!  I know the first one has a lot of ingredients, but boy is it a great pie!
