OT - Cookies | Arthritis Information

This morning I decided to bake cookies of some kind for our church supper. Didn't want to bake the same ol' same ol' cookies. So I added heath bar chips to the peanut butter cookie dough. Now my challenge for the day if I accept it is to stay out of the cookies so there will be enough to take.  OMG! - They are soooooo good!

Kinda ironic though because I really don't care for cookies.  My passions are cheesecake, coconut cream pie, pecan pie and carrot bars. Did someone say pecan pie? I'd be happy to remove that temptation  Yummm...I'd love to have some nice warm cookies with a glass of cold milk right now........I have a sweet tooth today...

Carrot Bars

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch jelly roll pan. Sift together the flour, baking soda, cinnamon and salt. Set aside.
  2. In a large bowl, beat sugar, oil and eggs until smooth. Mix in the flour mixture. Stir in the baby food carrots.
  3. Spread batter into a 10x15 inch jelly roll pan. Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool. Frost with Cream Cheese Frosting.
CREAM CHEESE FROSTING

6 oz. Cream Cheese                    2 sticks softened butter or margarine
5 - 1/3 cups powdered sugar       2 tsp. vanilla
Juice of one orange

Mix cream cheese and butter or margarine together. Add remaining ingredients and mix thoroughly. Spread on carrot bars. If you feel the frosting is a bit thick for speading easily add a bit of milk or more orange juice.              
WW- What is a jelly roll pan? Sorry its probably just called something else hereA jelly roll pan is a large cookie sheet with sides. Aw thanks I have one of those
