Yesterday I purchased the nicest bundle of asparagus I'd come across in a while.  I prefer my veggies raw or crisp cooked. However, my DH wants his veggies cooked. So I steamed the asparagus and then made Hollaindaise Sauce from scratch and added a scant cup of colby jack cheese to it. It was scrumpcious - absolutely scrumpcious.

Not like the time so many years ago when I thought I could cook and attempted to make it from scratch. Yes, it was definitely a cooking failure. From that time forward I relied on the packaged stuff. No comparison!.......

                                                                           Just had to share. I went to the asparagus festival in stockton ca yesterday. OMG, had it fried, in a tri tip sandwich, husband had a burrito w/ it. Soooo good. Nice to be a month ahead of the rest of the country for spring. Artichokes, strawberries and asparagus, oh my.Hollaindaise Sauce - I used the Betty Crocker recipe.

3 egg yolks - 1 Tablespoon lemon juice - 1/2 cup butter  - *1/3 cup cheese

Stir egg yolks and lemon juice vigorously in saucepan. Add 1/2 cup butter and heat over very low heat, stirring constantly, until butter is melted. Add remaining butter. Continue stirring vigorously until butter is melted and sauce is thickened. (Be sure butter melts slowly as this gives eggs time to cook and thicken sauce without curdling.)  Serve hot or at room temperature. Refrigerate any remaining sauce. Makes about 3/4 cup and has 85 calories per tablespoon.

After the sauce was thick I added 1/3 cup shredded colby/jack cheese (my favorite). Yummy.  I've seen recipes calling for either mild or sharp cheddar cheese, too.

My sister is going to take me out and show me how to find asparagus
in the wild. She can see it a mile away and maybe I will be able to too.
Asparagus has been really good lately!  And, unlike almost everything else, been a really good price (/bundle this week at WM)
 
I always steam ours but my parents had it out on a veggie platter the other day fresh and it was scrumptious!!
