A lot of us have been stressed out lately from various and sundry things affecting our lives. So I been thinking. Thinking about ways to combat this stress that is invading so many of our lives. One of the things I most like to do anytime really not just when I am stressed is to cook. I have some many cookbooks I'll probably never get trhough them all but here's a comfort food recipe that we like a lot. One of my favorites 'cause gosh darn it you just toss it in the crock pot and forget it for a few hours. Plus it smells so good while it's cooking. Yummy. I'll post it and if any else has a favorite food recipe they'd like to share or a cooking idea or anythng in that vein just toss it in. Anything to take pour minds off of this awfull stress that is trying to get us down.



Caramel Rice Pudding

Prep Time: 15 minutes

Cook Time: 4 hours,

Ingredients:

*     3 cups cooked white rice
*     1/2 cup raisins (optional)
*     1 tsp. vanilla
*     13.4 oz. can dulce de leche condensed milk
*     12 oz. can evaporated milk
*     3 Tbsp. brown sugar
*     1/4 tsp. salt
*     1/2 tsp. ground cinnamon

Preparation:
Spray inside of 3 quart crockpot with nonstick cooking spray. Combine all ingredients in crockpot. Cover and cook on low for 3-4 hours or until liquid is absorbed and mixture is thickened. Stir well. Serve warm. 8 servings

Mmmm...that sounds really good!You know if you didn't want to cook the rice ahead you could probably use Instant rice or Minute rice and just throw it in without cooking. Much simpler. I just usually cook so much rice ahead of time for so many things and then I freeze it for later. I wonder why that thought din't come to me earlier? Must be in a fog today. *frown*

I love to cook too.  I made tapioca in my crockpot and it was fantastic.  I am going to try your recipe for rice pudding as it sounds good.  I have been making a lot of ice cream so rice pudding will be a nice change.  I use my rice cooker for making rice..it turns out perfect everytime.  Again, thanks for the recipe

I enjoy cooking too- here is a recipe we enjoy:
 

SICILIAN MEATLOAF

 

2 eggs, beaten
3/4 c. bread crumbs (I use 1 slice white bread crumbled)
1/2 c. tomato juice
2 tbsp. parsley flakes
1/2 tsp. oregano
1/4 tsp. pepper
1/8 tsp. garlic powder
2 lb. ground beef ( I use meatloaf mix)
8 slices procuitto (I have used regular boiled ham as well)
6 oz. Shredded Mozzarella cheese
2 oz.  Shredded Mozzarella cheese

Combine all ingredients except procuitto and cheese. Pat out to 9 x 13 shape on a piece of foil on the pan. Lay procuitto and sprinkle 6 ounces of cheese down the middle of meat. Using the foil to lift, roll meat jelly roll style. Seal edges. Bake 350 degrees for 1 hour.

Top with rest of cheese and bake 15 minutes longer, enough to melt cheese.

Hiking Gal, I'm making tapioca in the crockpot right now!  It love tapioca.

Hmmm, I don't like to cook that much but I sure do like to eat!  Does that count?  It lowers my stress level every time.  LOLJesse-

Snowowl~ ~ That's the way my grandmother always cooked. Just rummaged through the fridge/pantry and always came up with something that tasted out of this world. Her house always smelt the best.
Umm... such fond memories.
