Does anyone have a favorite healthy salad they can share?

I'm getting bored with mine.

I use mesculan greens, red pepper, onion, cucumber, raisins, cranberries, 1 TBS of blue cheese crumbles and fat free raspberry pecan dressing.

It's good but I need a change....
I don't eat much salad - never really cared for it, and if I do eat salad before a meal I won't be able to actually finish my food... and then I'm hungry again in 2 hours. Pin Cushoin should be able to help you with that .... she is kinda the salad "expert". She craves salads for days at a time and eats only salads.

Maybe she has some ideas for you.
is this for a meal or for a side

For some reason I only like cooked spinach but I'm sure I could substitute some kind of lettuce Sno- thanks!

Buckeye the salad would be a meal- I usually eat one about 4 times a week.

You should have more protein than a spoonful of cheese.I know I really should....but protein has calories!
I know I really should....but protein has calories!
And it will help you feel full longer, and you'll have more energy which will help you burn calories.
They want my mom to eat more protein. So she is taking fish capsles LOL! She said she is going to smell fishy after a while of taking them LMAO!!

I asked her what about a protein shake and she said she was not sure. She is diabetic too.
They want my mom to eat more protein. So she is taking fish capsles LOL! She said she is going to smell fishy after a while of taking them LMAO!! You know what my problem is? I'm small. I can only eat just under 1500 calories a day to maintain the weight I want to be which is 10 lbs lighter then I am. 1500 calories is NOTHING! Especially when you are a little girl with a BIG appetite who LOVES food!
My husband cooks dinner and he does not try to watch like I do when cooking. I try to sub lowfat and fat free ingredients whenever possible. he likes butter and oil! I try to have 1 starch and a veggie with the meat- sometimes I'll come home to french fries and macaroni & cheese with our meat...
So I try to save up as many calories I can.....
No, she was messing around with me. LOL! She said her joints were feeling stiff, that is the reason for the fish oil capsals.

She is taking something else for the protein and my sister is making her a lot of meals made of good meat. And she is drinking a diabetic liquid supplement.

Meslcun, chopped green or red cabbage, cucumber, tomato, sprouts, grated carrot, grated beets, avocado, mixed nuts, raisins, assorted raw cruciform veggies such as cauliflower or brocolli if you have some on hand, cheese, and miso/honey/yogurt dressing.....mmmmmmmmThis is a favorite at my house

 Artichoke Garbanzo Bean Pasta Salad

1 can of artichoke hearts chopped, 1 can of Garbanzo beans drained, 2 cups of pasta shells, 1 1/3 cup of fresh spinach leaves, 1 tomato chopped, 1 red pepper chopped

Mix these in a large bowl and then blend 4 tsp of olive oil, 4 tsp of lemon juice, 4 tsp of water 1 tsp of minced garlic, 1 teaspoon of oregano, 1/4 tsp salt and pepper in a blender until they're smooth, then pour it over the salad. Cover it and chill for a couple hours.  Top it with Feta cheese before serving.

It's my girls favorite......
Some yummy new ideas-thanks!
Some yummy new ideas-thanks!
Seriously, though, make sure you have some protein.  As others have posted, there are many low-calorie high-quality proteins available.  Diced lean chicken, lean beef, some dairy products, beans - you gotta have protein (and some fat!!!) otherwise you're gonna be hungry a whole lot quicker, and that's when the sneaky calories tend to attack.  Just a bite here, just a sip there; larger portions at dinner... it's very easy to end up eating even more total daily calories if you skimp on one or more meals.  Your body will demand that you make up for it.
JasmineRain2008-09-11 16:03:02This one is my favorite

1 pkg Good Seasons Italian dressing
follow directions on pkg using balsamic vinegar and olive oil
add handful of cran-raisins to dressing and refrigerate

Put this on Spring Mix salad greens topped with pan roasted pine nuts and gorgonzola cheese.
Another good one!

Jasmine Rain- do you mean if I ate some protein at lunch I wouldn't have put away 4 (yes I said 4) pieces of pizza for dinner?
