Here is a recipe for a chocolate cake where the ingredients are all thrown in a bowl and can be mixed gently and tossed into the oven. It's the only baking I can do now and using a silicon cake tin means it really is a one-bowl cake with little cleaning up.

Prep Time Cook Time Serves Ingredients

Here's how
1. Preheat the oven to moderate (180C). Brush a deep, 20cm baba or ring tin with melted butter or oil.
2. Place all the ingredients in a food processor. Process in short bursts until the mixture is well combined and has a smooth texture.
3. Spoon the mixture evenly into the prepared tin. Bake for 35-40 minutes, or until a skewer comes out clean when inserted into the centre of the cake. Leave the cake in the tin for 10 minutes before turning onto a wire rack to cool. Drizzle with rich chocolate icing (recipe follows), if desired.

Tip: this cake is delicious served as a dessert with freshly whipped cream or ice cream and fresh berries.

Rich chocolate icing
60g butter
100g dark chocolate, chopped
1 tbsp cream

Combine the butter, chocolate and cream in a small heatproof bowl. Stand over a pan of simmering water and stir until the butter and chocolate have melted and the mixture is smooth. Cool slightly until the mixture is spreadable. Spread icing over cake using a wide knife.

I don't use a ring tin, I just bake it for an awfully long time.  It's a very forgiving recipe and always tastes good.  I don't bother with the topping.

At the moment I add fresh brazil nuts and use natural Greek-style (thick) yoghurt instead of sour cream.

TAKE-OUT

I like to add a few finely chopped pecans.

5 MINUTE CHOCOLATE MUG CAKE 

4 tablespoons flour 
4 tablespoons sugar 
2 tablespoons cocoa 
1 egg 
3 tablespoons milk 
3 tablespoons oil 
3 tablespoons chocolate chips (optional) 
a small splash of vanilla extract 
1 large coffee mug 

Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla extract, and mix again. 
Put your mug in the microwave and cook for 3 minutes at 1000 watts.
The cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired. 
EAT! (this can serve 2 if you want to feel slightly more virtuous).
And why is this the most dangerous cake recipe in the world? 
Because now we are all only 5 minutes away from chocolate cake
at any time of the day or night!

Cover with lid and put over very low heat and simmer gently for 40 mins.
Cool and blend in  food processor. Serve with a little fromage frais and fresh bread
It really is the most delicious soup on a cold day.
 
MUCH BETTER THAN A TAKE OUT .....Pin Cushion.......that recipe is nearly identical to the soup I make quite regular. except I put in broccoli and cauli....yummy!i'll have to try that.
 
Another soup that is easy
 A whole head of broccoli in a saucepan,enough water to cover the entire head, boil until tender, drain half the water away. Add  teaspoon of mixed herbs, and pinch of salt and pepper. Liquidise the lot and then put back into pan, cut a block of mature cheddar cheese(240g)  into small squares and add to soup and heat on low until cheese is melted stirring the whole time. Serve with crusty bread....lovely
I saw this pie at the "Village Inn" restaurant and it looked delicious. Their table-top ad listed the ingredients in the pie, so I tried to guess how they did it. Was I ever surprised when mine came out looking way better than theirs -- and so very easy!!! The whole thing was devoured in minutes by guests.

So, if you're looking for a delicious EASY recipe that will impress your guests, follow recipe below.



Hawaiian Strawberry Pie

1 container of Philadelphia Cream Cheese ready to serve pie filling (a fairly new product)
1/2 teaspoon vanilla
1 can pineapple tidbits (drained)
Pecan pieces -- til it looks right for your taste
1/4 cup coconut
1 pt. of Strawberries
1 package Strawberry Glaze (usually found in grocery stores next to the berries)
1 baked 9-inch pie shell cooled
Whipped cream

1 pre-baked 9" pie shell. I used the pillsbury crust you find in the dairy case.

Mix the vanilla, pineapple tidbits and pecan pieces and coconut into the Cream Cheese filling. Place in 9-inch cooled pie shell.

Place glazed whole strawberries on top of this pointy side up. This is the messy part! Leave a little space around the outside edge of the pie for the whipped cream.

right before serving, place whipped cream around outer edge of pie.

NOTE: You'll have to wash hands real good after this to try to get the strawberry glaze off of them -- it tends to stain your hands.
