So......do tell....what types of cookies will you be baking for Christmas?

 
I think I will be baking pignoli cookies and thumbprint cookies, maybe sugar cookies I had to google pignoli cookies....they sound really good.  I'll make sugar cookies, thumbprint cookies and probably no bake cookies becuase my husband likes them a lot.  They always just taste like a big ball of sugar to me.  Maybe we'll try your pignoli cookies too.My niece and I will be turning the place into a wholesale cookie factory soon -- Sugar cookies, peanut butter cookies, oatmeal raisin pecan cookies, Mexican wedding cookies to name a few....chocolate chip, christmas cutouts, nobake....keeping it simple this year.I made an executive decision 35 years ago.
 I DO NOT BAKE for Christmas.
 no cookies, cookie bars, meruanges, nada.
 
boy does that take a ton of stress of your shoulders.
 
 now that we have the kidlets,  I MIGHT pull out a loaf of pillsbury's cookie dough and let the kids play, but that is  the extent of it.
 
middle son's GF is a baking machine.... she'll tear up my kitchen in the near future baking breads and all kinds of concoctions...... 
and I like baking.. and now that I have a big mixer it doesn't cause me pain!!!

I'll do my usual mix - everyone has their favorite.   peanut blossoms (peanut butter cookies with a choc star on top), peanut butter balls, fudge and sugar cookies.     Or, at least that's the plan.

I already made shortbread from the back of the Canada Corn Starch box because the longer you age it the better it is. I'm going to make Lorster's Ginger Snaps (I made them last year along with a couple other Ginger Snap recipes and they are by far the best), and maybe try some Jam Cookie's BF's mom used to make for Christmas if we can find her recipe.Glad you liked them Gimpy. They are soooo good.

Also some made with grape for my husband- yuck.I used to make platters for friends. The last time I did it, pre RA, I made 22 different kinds of cookies...swedish spritz, swedish almond tarts, thumbprints, etc. etc.....my hands don't work well now, and standing up for long periods of time is out of the question.  Oh well, what can you do.  I may try and make swedish almond tarts since those are my families favorites.Thats the best thing Debra- a good compromise!  Unless I get help I think I'll cut down tooWow you guys are making me hungry!  I wish I could still bake, but not these days.  Fortunately, I have my mother around to make gingerbread cookies (we decorate them in naughty ways for fun), Russian tea cookies, and some other goodies.Cookies are big here in Mexico and I plan on making Mexican chocol. cookies, oatmeal with raisins, coconut cookies, stained glass cookies for the children.  LindyI made New York cookies yesterday, youngest daughter's favorite. Just finished Russian Teacakes aka Mexican Wedding Cookies, and am taking a break, will probably make one more today. DH likes Williams & Sonoma's Candied Ginger cookies. My wrists aren't letting me roll the cookies smooth :( that's a new development, but at least I'm doing okay with the cookie scooper. I sit at the table to load the cookie sheets, and have a heavy duty Kitchenaid mixer to do double batches. Then there was the really good peanut butter ball recipe that was on here last year. Christmas is the only time I bake like this, probably have my joints screaming thank goodness. Then there's the Candied Citrus Peel, but we haven't eaten enough grapefruit and oranges yet. It's so easy but delicious.  I make oatmeal cookies and put in coconut and a little lime zest in part of batch and some orange zest in rest of batch.  I also make a mango/ginger cookie bar.  If you make, enjoy.  Lindy

up north here in IL we call those cookies with peanut butter and hershey's kiss :  peanut butter blossoms.  My daughter and son both love to bake and enjoy making sugar cut out cookies. I used to bake lots of cookies and have hubby take to work for all the guys in the shop and would give them to teachers and neighbors. The guys at hubby's work are asking already where their cookies are. LOL We put our tree up last weekend so maybe this weekend, we will make some cookies!! I have to make snickerdoodles for hubby and choc chip for kids. I have a computer chair that has wheels that I use in the kitchen to help me out and a radio with Christmas songs playing all the time!! I love Christmas!

No way!!!!  I like a mixed fruit Croatian jam in mine.  Strawberry sounds good too!  Grape jelly???  Grape jelly is for PB&J sandwiches Dalmatinka- PB&J- you got that right! bump--does anyone want to post the recipes for these delicious sounding cookies??I'd be willing to post any that anyone has interest in from my group.
