OT Christmas Cookies | Arthritis Information

Well I started my baking tonight. I can cross Snickerdoodles off my list. I never liked baking- now with these sore wrists I like it even less. I think I'll get someone else to make the dough tomorrow. Yeah-I pawned off Christmas Eve cookie making on my husband when the kids were little.  I was always just too worn out by that point, and it made for a nice tradition for them.  Besides I don't really enjoy baking anymore.  Eating yes, baking no.One of the few things I can effectively cook/bake is cookies.  My husband is the chef around here and loves kitchen gadgets so my mom got him a stand mixer last year.  As a result I was able to make some cookies! It all worked out well until stirring in the chocolate chips by hand, which I had to have him do.

I also excel at buying those tubes of cookie dough, slicing them and baking them.  :)
Pancakes used to be on my list until a year ago when I set off the fire alarm, I didn't cancel it in time, Brinks called the fire department and 2 engines showed up at the house.  That was the last time I made pancakes! So embarrasing.  But it was good to know that Brinks worked!
Had to add...not sure if anyone has seen the Friends episode on point, but the recipe for chocolate chip cookies on the back of Tollhouse chocolate chips really is the best recipe there is.  Although I don't add nuts...That's the chocolate chip recipe I use too! I just made my grocery store listbfor cookie making stuff.  Guess I'll be baking them tomorrow or Thurs.  Also, am making a spice cake.  Snickerdoodles will be the first ones I make...yum.  LindyI bought the stuff to make these ritz cracker cookies.
You take two crackers and put peanut butter between them.
Melt white almond bark with a tad of shortening and dip in the ritz crackers. Drip off excess and put on wax paper and sprinkle pretty red sugar or whatever sprinkles. They are awesome. You have the sweet/salt combo. Also, they look pretty and travel well.
The only part is....you have to stand there and dip them one after another and it's hard on my feet and back after a while. I decided to get a bar stool and put next to stove tomorrow or when I decide to make them.
What are snickerdoodles?  Sounds yum! janie I want to say they are a kind of sugar cookie. They are made with both butter & shortening, sugar, eggs, cream of tarter, salt.  You roll the dough into balls and then roll them in a sugar - cinnamon mix. wahhh I forgot to pack myself a couple for after lunch today! They were eating them as fast as I baked them last night. I'll be lucky to get one when I go home!OK last night I wanted to cross magic Cookie Bars off my list. I made them and they stuck in the freakin pan pretty good as usual- does anyone else have this problem? Am I missing something? The bottom layer is melted butter so it can't be that you need to grease the pan!I have a specific spatula that I use only for magic cookie bars. it is only about 2 1/2 inches wide and about four inches long and is as stiff as a piece of steel. I would try to warm just the bottom in a pan of warm water, then pry them out with a stiff spatula. I think the trick with those is to get them out of the pan asap. Ps. they are my faviorite!!!!

A couple of years ago, I was unable to bake at all and hubby bought me a kitchen aid mixer = the industrial kind. it is awesome and no more mixing. Sadly due to my accident and hysterectomy, I will not be bakinbg this year.
Oh owie- I don't even have to ask...you are not feeling well -I'm sorry. Hope you rally around before the holidays so you can enjoy yourself a little.

See- I never tried to get them out of the pan quickly. In fact after they cooled- I put them in the fridge first to firm up. That must be what I am doing wrong!
