For dinner. I am so tired of the same old same old. nothing sounds that great. I could get by with a salad, sandwich, or whatever.

I am burnt on cooking the same  meals.
I need ideas. Something easy.
Anyone have a favorite easy recipe for me?
I have any meat I need in the freezer,. I also have some fresh veg. Just drawing a blank. I want to fix my husband a nice meal. He has been working hard and he loves to eat at home. I have been not doing all I use to do, so I would like to come up with something fresh!
 We had white fish yesterday cooked in foil and italian season. I love fish, not husbands favorite. Maybe a steak?....help
 
What are you all having for dinner?
 
I had a Leg Of Lamb dinner last night. It had been while for that. It was DE LISH !!we must be thinking alike at the same time. my post is very similar.:)  good luck with dinner.

Porkchops stuffed with apple dressing, spinache salad, mixed veggies.I found the recipe online. I have it all prepped and ready to pop in oven.

The Lamb sounds delish, but nothing I had on hand. I will have to look up recipes on how to prepare it.

sTinkerBell2009-01-19 14:43:23I am making homemade sausage pizza....pork tenderloin.....pan sear to brown, shove in 375 oven, doesn't take long to cook, 20 min at most........either put roasted garlic on it, or fresh rosemary or fresh sage, or wrap in bacon, or make a reduction of oj and cranberries or fresh applesauce.....i love pork tenderloin.
 
filet mignon in a wine & dried cherry sauce.  yum.
sTink. I started to respond here yesterday and then the phone rang and I got called back into work for a few hours. Here is a very good recipe. It is easy, cheap, filling and even though it sounded terrible to me when it was first made for me, it is delish and something my family actually asks me to make.

Chicken enchalada casserole:
Cover bottom of 9x13 pan with cooked white rice. (I use long cooking but minute rice works great too). Boil 3 chicken breasts for 10 minutes and chop into 1 to 2 inch cubes. Place chicken pieces over the rice.
Tear up one soft flour tortilla and place over top of chicken, spread evenly. Cover with grated cheddar cheese, 1 to 2 cups. Salt and pepper entire area.
Take a can of cream of chicken soup, a small can of green chilis, and half a soup can of water, mix and pour over entire pan. Sprinkle top with a bit of cheddar cheese. Bake in a 350 oven until it is bubbling around the edges. Serve with salsa and sour cream. Fresh cilantro is also good.We had pot roast  on Sunday, and tonight we are having a roast chicken. Both were on sale at incredible prices  this week so I stocked up.
 
 A regular standby for us, that everyone loves, is hamburger gravy over mashed potatoes.
 
 I brown the burger with a teaspoon of  dry bullion mixed into it. I break it up pretty good, not as big as for chilli, and not as small as for manwich. When its nice and brown I drain it, and pour in about a cup of water, and then add a package of plain brown gravy mix  premixed with about a half cup of water..  Simmmer.
Pour over a nice serving of mashed potatoes, and to be honest I use instant for this.. Stand back as it disapears.
 
Another favorite is what we  call "granny's taters."  Microwave about 4  good size potatoes cut into chunks.  Dont cook them all the way, just precook a bit.. for 4 potatoes you want about 10 minutes.  While that's happening break up a couple of mild Italian sausages, take them out of the casing.. also 2 or 3 breakfast sausages and  one onion chopped and about a half a cup of chopped green peppers. Cook this all in a big skillet. Mix the potatoes into it and stir occasionally to brown and soften the potatoes. ( you may add about a half cup of water, it will cook off and get the potatoes nice and soft.
 
Just keep mixing this together, til it feels nice and done.. then add about a half cup or more of shredded sharp cheddar cheese. put a lid on it and let the cheese melt.
 
OMG this is wonderful.
We had shish ka bob last night.  I marinated top round for several hours.  Put on skewers with onion, plum tomatoes, poblano peppers and put on grill.  It's easy and only takes a few minutes to cook.  Served rice pilaf and a salad.  Yummy and quick.  Lindy [QUOTE=kathy_in_wlsv] We had pot roastĀ  on Sunday, and tonight we are having a roast chicken. I Love hamburger gravy over mashed potatoes!! All this food sounds like comfort food which is the best.KATHY,
Your Ideas are perfect, easy and sound delish. My husband is a meat and potatoe guy. Have tried those mashed potatoes already cooked in the store. They keep well, I will use them and make Hamburg Gravy. I haven't made that in years, since the kids were home.

Ok, I love the recipe because I can use leftovers many times. Chilli, any kind of beans, stew, You need 2-3 cups of liquid along with some veggies, add mexican spices to change from chilli, you want it spicy. You need the liquid because when you pour the corn bread part over it, it sinks into the juice and then floats after absorbing liquid. Really really yummy. No need for mixer for corn bread, it mixes easy. Here is the official recipe Corn Bread Tamale Pie.

1 pd ground beef
1 chopped union--saute in lightly greased skillet.

When mean is browned add:
1 cup of tomato soup (or sauce or stew etc)
1 cup water/stock,
1.4 tsp pepper
1tsp salt
1 tbsp chilli powder
1 cup drained corn (or fresh)
1/2 cup chopped green pepper (I had Jaenpena too)

Simmer 15 minutes. Preheat over to 425 degrees. Meanwhile

3/4 corn meal
1tb spn flour
1tb sp suger (I skip this)
1/2 tsp salt
1 1/2 tsp double acting baking powder
Moisten with one beaten egg, 1/3 cup milk and after mixing 1 tbspn veg oil

Pour the meat mixture in greased 2QT casserole (depending on leftovers, I add half again corn bread recipe and put in 3 quart or 2 -1 1/2 quarts.

Pour the corn bread mixture over mean mixture and put into oven. Bake 20-25 ,minutes till brown. don't be scared if the corn disappears into meat mixture, it will come back.

Hi BG, I love this dish.  Made it last week with a few variations.  LindySo now I am hungry!!  I will raid the fridgeLinB, don't you love all the variations? How almost any leftover can be made with it?

I made sh*t on the shingle the other night and it was so good.
Make a white sauce with butter, flour and milk. Chop up Budig beef and add it to sauce and serve over toast or biscuits. Easy, and cheap. Also good on mash potatoes. I also like to make chicken breast baked with rice and cream of mushroom soup. I like any thing that's easy and cooked in one pan so the clean up isn't so bad.
