OT What do you eat for lunch? | Arthritis Information

Almost every day I have a salad. Arugala, carrots, onion, tomatoes, cucumber and a tablespoon of some kind of shredded or crumbled cheese. Light balsamic vingarette. BORING!!!! Today I follow that up with my "sweet snack" of strawberries and blueberries....oh come on some one give me a cookie please!I had Lightning McQueen Mac & Cheese. That is what son said he wanted for lunch, and that is what I had to eat. As son is still not feeling up to eating because he is still "sick". But I LOVE mac & cheese so... joonie2009-07-07 10:34:33Oh I love Mac & Cheese too! Last night we had it as a side dish. I skimped on the butter to make it lower fat.

 
#1 son says- do you used whipped butter when you make this or something? I said no but I used less.
He says- yuck it's horrible. It tastes better at college even when I had to substiture water for the milk!
Oh I just started using REAL butter, instead of margarine. And it is soo smooth and tastes too much better! I read some where that real butter was better for you than margarine. Now, when hubby uses margarine in the mac & cheese I will ask if we are out of real butter. Because I can taste the difference. I get the no salt butter.
 
My daughter... she will not eat the mac & cheese if she knows her daddy made it. Funny thing is... I will go in the kitchen and watch hubby make it, if I am not doing well. And daughter will ask if I made it, and hubby will say "She was in the kitchen wasn't she?" And then she will happily eat it and not complain.... heheheheheee! Daughter claims she can tell the difference between when I make it and when hubby makes it, and well... we know she cannot. You are right- butter is better for you than margarine. I prefer the flavor too.
 
My family eats things happily if they don't see that I have substituted low fat products for full fat but if they see it....oh it tastes terrible! My husband says don't force that low fat crap on me!
Oh not too long ago... I actually got hubby to switch our milk over from whole milk to 1% milk. He says he will not go down to no fat milk, as that is just plain white water. I told him that son, needed less fat milk so he will not get chubby like our daughter did when she was a toddler and pre-schooler. So... hubby agreed once he tried it and it did not taste any different.
 
I recently got hubby to start eating brown rice instead of white rice. He likes the brown rice now.
 
I keep telling hubby I am doing all of this so we can be a little more healthier and some of us need to lose weight and stop eating soo much foods that produce sugar or is fattening.
 
He rebels every once in a while, but I guess he needs that LOL!
 
Oh and for deserts I got him to eat angel food cake with low fat cool whip LOL! He is obessessed with it now!
We are down to skim milk and now full fat milk seems so rich it would make you sick.
We do the angel food cake with cool whip too! That's what these strawberries and blueberries are left over from. That was my red white & blue 4th of July dessert! HMM I wish I had some cake to go with this...
Lunch for me is the same  most days. 4 ryvitas with sesame seeds with laughing cow low fat spread on them and a piece  of fruit.
I used to eat salad non stop, more out of craving it than anything but  I stopped as it messed up my digestive system ( 4 bags of salad a day)...I then started munching raw carrot batons, that also turned into a 4 bag a day habit
The salad and the carrots are moist so I think its something to do with my Sjogrens.
I saw the doctor about the orange colour my skin is turning. He didnt think it was dangerous and should dissapear when I stop eating them. I had bloods done to see if it was a deficiency but I only had low iron levels again....At least I look nice and tanned. I switched from Whole Milk to Skim when I started this diet and I love it. I refused to even try it for years and now I love it.
 
I started switching the majority of my things to low fat options about two months ago and I've lost 15lbs and don't miss all the fast food and high fat things nearly as much as I thought I would. I haven't had anything fried in months and I think that's been huge for me. It takes a little time and committment but once you get use to it it's pretty easy.
 
Just drinking water instead of sugery drinks like soda will make a huge difference in your calorie intake for the day. You'd be surprised how many calories are in some of those drinks.
I could never switch back to whole  milk. It took us a while to change but its amazing how quickly you become used to skim.
I even make fries in the oven now instead of the chip  pan, the kids love them.
We dont drink much cola or other fizzy drinks unless we are at a party, at home we drink ice cold robinsons barley water. The kids love plain ice cold water. In the winter they all like a pot of tea.
I also recently got hubby to make the kool-aid right. He use to put ALOT of sugar in it. I mean so sweet that it would make my stomach hurt. And one time when I was preggo with son, I drank a small cup of the kool-aid, before I went to the gyno, to take my prenatals and they checked my blood sugar and it was elevated. I knew why it was elevated, but they made me to the the orange drink test anyways to make sure since I was on pred too. I passed it, so it was hours of wasted time because hubby put too much sugar in his kool-aid.
 
Now when he makes it, he puts 1 cup. Which is more to my liking, not his, but who cares LOL! He does not need that much sugar.
The longer you stay away from full fat products the less you miss them. I agree baked "fries" taste great! Especially those Alexia brand. It's like only 150 calories and a couple of grams of fat and they are crispy and tasty!
 
When my daughter was a baby she loved the orange veggies like carrots, sweet potatoes, squash...so much so her little nose turned orange and the palms of her hands!
 
Yikes Joonie! How much sugar was he putting in that Kool-Aid? A cup is what it calls for.
Oh wanted to mention. That I have been buying this gallon bottle of water that has a spigot on the front of it. It is like .28. And the water is purified and not TAP water. And is always cold! Helps me to drink more water that way.
 
I sometimes have trouble getting the spigot to pull out., because of when my fingers are swelled. But other than that... it has been a good for me in the way for drinking more water.
 
I just cannot stand tap water, as I can taste everything in it and it tastes weird.
oh he would not measure it. He would fill more than 1/4 of the way up the pitcher and sometimes more. He use to go thru a 5lb bag of sugar with just 3 pitchers of kool-aid made. So... how ever much that is.
 
Hey! I like the idea of baked fries! Less mess with grease clean up!
I have started drinking bottled water for the same reason. I hate spending the money on it but it's portable and I find while I'm driving to work I can down a whole bottle with ease. For some reason when I drive I like to drink water. Other than that I hate it- even the bottled water. It makes me feel bloated and I have to pee too much. But being on MTX I know it's good for me so I take it like medicine.have a cookie....1 cookie a day will makevery little difference on your overall diet andif it helps to make you feel less deprived its worth it. I like the 100 calorie bags of keebler fudge striped cookies.  They fulfill my sweet tooth.
 
Lunch is my biggest meal of the day so it varies.  Today I was out so I went to Panera and had their strawberry poppyseed salad.

I cannot open a bottle of water. So... I have to get someone else to open it for me. I have tried to see if there was a bottle that had a seal that was easier to break than another, and well... have not found one. Just a lot of the palm of my hand being red and sometimes the skin broke on the palm of my hand as well. SIGH. I tried them all... and many different brands and store brands, but those darn lids are "glued" on those bottles.I actually do usually have a cookie- I have been bad lately with picnic fare so I was trying to pull back today.
 
I haven't been to spark people in awhile but that is an excellent site!
Usually my lunch is left-overs of whatever I had for dinner the night before.  Today it was lamb and new potatoes.
 
Joonie, if you like the Crystal Light lemonade you can do what I do with those water jugs with the spigot.  I put the appropriate amount of Crystal light powder in the jug and have my hubby shake it up really well.  Then I have "lemonade" on tap in the fridge and it isn't loaded in calories.
Now that I'm not working anymore and don't go out to lunch every day, I usually just have a turkey sammich, some sort of vegetation (apples, bananas, salad, etc) and a Coke.
