Previously there have been some posts r/t lunch. With your indulgence, I will share today’s luncheon menu with you…
Miso soup with shredded carrots, bok choy, crumbled seaweed, scallions, garlic, and assorted peppers served over udon noodles with a drizzle of mirin.

Probably not as low sodium as it should be, but it fits comfortably with my very low protein and ash-free live it! It is also relatively low carb and low calorie... ... ...

edited as card and carb are not even close...not even on the keyboard!

I had ranchero wrap.......   eh.

i went to friendly's and had a kids menu, as usual.
i got chicken sliders, yummy. weird, that they usually come on sticks, but not today, so they didnt feel like "sliders" without the sticks
 
then i had an oreo sundae and a glass of milk. yummy.
 
mom and grandma also had chicken for lunch, different kinds tho, grandma's had plenty of vegetables and moms was had cheese on it.
 
ALOT of chicken (we even had chicken for dinner last night) lol

I have always had a fondness for miso in nearly any concoction, but with the strict dietary restrains of late, miso soup has become a staple.

I have a Korean friend who makes miso, from -scratch- every couple of months so have access to unpasteurized, unprocessed, straight-outtah-the-crock miso on a more or less regular basis. Sometimes I substitute my evening white tea with a weak cup of miso broth; it is wholly satisfying!

OH boy  that sounds devine.... I dont' think I've had it that fresh......  cheers!! Miso sounds really good right now, especially if I had a side of California rolls.  Instead, I'm having sliced tomatoes (fresh from my friend's garden) slice of homemade bread (yes, I baked bread) and an apple.  My lunches are always pretty simple because I usually eat oatmeal or poached eggs for breakfast along with a fruit and a grain.  Right now I'm into simple, clean food; I guess it has to do with so much summer bounty being available where we've settled.  The farmer's market is this evening so I'll be stocking up.  Everyone enjoy your lunches.  Lindy

I forgot to eat lunch today. I had leftovers from my hillbilly dinner last night, which was fried potatoes, onions and hot sausage.  Not very dietetic, but okay in moderation, and good for stretching my old budget.I had a hotdog. Hahaha!! All of your lunches sounded so much better!!Hey all, what are we having tomorrow?  I just had cheese, crackers, greek olives and homemade pickles for a snack.  Upping my Pred. is ruining my diet and ruling my life.....aargh.  I had baked chicken with lemon, garlic, thyme, onions and roasted potatoes and brussel sprouts for supper.  I'm on the Pred. see/saw and I can't get off!!!!!! LindyLindy, I empathize with the see/saw. I am craving so many foods that are not on my live-it. It is torture!

I do not know what will be on the table tomorrow, but I know that I wish it could be a ripe Fallon, Nevada heart-of-gold cantaloupe, just picked and aromatic...
SHUG, you know about our hearts of gold?  They're just starting to ripen but not at their peak, maybe another 2-3 weeks and I can hardly wait.  They don't travel well and that's one of the reasons there not well known out of the Fallon area.  We've been getting our tomatoes at our friends garden.  It's organic which is very unusual for Nevada.  He's developed his own tomatoe in the last few years.  It's very tasty and there's 7,000 tomatoe plants producing!!! 
 
I agree it's torture.  It's much worse for you because of your diet limitation but the benefit of your diet will be worth the torture.  Have a good night.  Lindy 
Yes, I know about hearts of gold...I grew up in Stillwater! Bob just brought a basket filled to the brim with ripe tomatoes into the kitchen. They smell of the Sun. I can only indulge one small taste at a time as they are very high on the acid ash side of the list. But I can indulge greatly in there juicy goodness as we prepare them for freezing.

you are making me hungry!!Hungry is good! I just popped two eggplants and a half-dozen garlic bulbs into the oven and have a pot of garbanzo beans simmering on the back of the stove.

With a goodly drizzle of olive oil, a handful of herbs, a few roasted peppers, and a food processor we will have eggplant and garlic hummus on crostini for lunch and enough left over for later in the week.
nah.. not good when at work w/ limited access to good stuffs!!!
 
having a chopped salad..... but it doesn't sound nearly as good as your choices.
I'm having a Lean Cuisine. Turkey & Vegetables. Not bad for 150 calories! It's late for lunch so I started to have a pack of crackers.....for for 190 calories I figured I'd eat the Lean Cuisine and be more satisfied. I'm the BAD GIRL- today is my Fat day and I had a WHOLE Calzone with sauce!all i had was some Stofer's mac and cheese
my mom decided she didnt wanna make nothin
 
but thats ok, mac and cheese is my favorite food
altho, when ur stuck having pasta w/ alfredo suace for dinner
it seems a lil bit too much pasta and cheese in one day
 
but, i dont always get to pick what i wanna eat,
i wanted some mozzerella sticks with yummy sauce. i like those alot too.
 
wanttobe, whats a calzone? i heard of them, but i NEVER had one. now i gotta figure that out, lol.

Oh...my...yummy! I haven't had a calzone, an Italian stocking, since leaving New Jersey more than 20 years ago. We occasionally make stromboli, but hmmm, not calzone.

I will have to rectify that ASAP.

Our eggplant/garbanzo hummus was good, but not nearly as good as a calzone with sauce.
I yi yi- I am still full! What a glutton I made of myself. Star a calzone is pizza dough folded over and sealed in a half circle. Inside is a lot of ricotta and mozzerella cheese. You can get ham or other meat, veggies, etc. put itside if you want. You drizzle tomato sauce all over it and eat it with a knife and fork. TOO GOOD!
I don't know Shug- are you allowed to eat such a thing? I wouldn't want you to make yourself sick...better slow down!
oh calzones sound tasty, i'll have to try one of those someday
maybe this weekend, its italian food right
so the local pizza places should sell them, right?
 
if they sell pizza, ravioli's, pasta and stuff, then they might have those i would think...
i'll have to check out their menu's, we have ALOT of pizza places, shouldnt be hard
 
and it'll be well worth it, i assume it tastes yummy. so i'll try it soon. if my mom lets me, she's still slightly concerned about my blood sugar. not as much as before, but still she trys to stay low carb as possible.

or if im really anxious, all i have to do is walk down the street with my mom and we can stop at the pizza place. altho they make some pretty cr*ppy pizza. i WOULDNT reccomend them to anyone.

I had cheddar cheese and an apple for lunch.  Dinner is flank steak, broccoli with lemon, wild rice and OMG I made dessert again - blueberry, lemon loaf bread.  Please someone make me stop.  Stan isn't any help because he's also reaping the rewards of my Pred. increase. 

Shug, your tacos sound so good.  I love vegetable tacos.  I'm making a pot of ranch beans tomorrow and will have to make pico de gallo because I'm also making quesadillos.  I understand completely the "food on my mind" syndrome.  I'm going to start decreasing Pred. tomorrow.  Enjoy your dinner.  Lindy
for lunch today, i had
a sandwich and some chicken flavored ramen noodles (i love ramen)
my mom  wasnt hungry, so she just had ramen
 
for dinner im havin Boston Market (that resturant place, incase some ppl dont know about it)
 
im havin, turkey w/ gravy, mashed potatoes, mac and cheese, cornbread and a brownie
thats what ive been havin every friday, instead of McDonalds

Hop to it Jas, the evenings almost over for you and you know how good those late night brownies are. 

Jas, one, or at the most, two a week are my limit and usually several days after I've taken MXT.  Sometimes I reserve that time for wine or a martini but only one of them.  So far liver functions have been good.  Lindy

actually, JasmineRain when i looked up the calories and stuff for what i eat at Boston Market (did that a month or so ago) eatin Boston Market, is actually worse than McDonalds
 
and nope, i havent had the chance to get any dietary advice, mom hasnt had the time and she sayd since my blood sugar is staying good now, that its not so important anymore (ive been good for weeks, maybe 3 weeks now. i dont even have to call the diabetes lady anymore)
Just because your blood glucose level might not be in the diabetic/pre-diabetic range any more doesn't mean it's "not so important."

Do they not teach nutrition in junior high/high school any more?
actually they dont
they dont teach anything about eating healthy and stuff
not in 6th or 7th grade
and im pretty sure they dont do it in 8th grade either
 
and i thought that was odd
cuz last year in 7th grade, science class's theme was biology
so learning about the human body id expect to learn stuff like that
but that didnt happen
 
we learned about: cells,joints,bones,skin,muscles and thats it, and we learned about those things very briefly. because, in the middle of May, r science teacher got hit with a metal door, and missed the whole rest of the school year, didnt even come back the last day to say bye.
 
i missed him, he was one of my favorite teachers...
Then you really need to take initiative and do your own research. Start with your medical team and find out what type of eating plan they suggest.  It's not a "diet" because good nutrition is not a temporary diversion from a lifetime of brownies and pasta.

As an RA patient this is probably not the last time you'll be using prednisone, and since you have RA you're also predisposed to other chronic illnesses.  Proper nutrition NOW can help prevent many problems now and down the road.

It's not the restaurant, it's the food you've chosen.  You can have a reasonably healthy meal at almost any restaurant - even McDonald's or Boston Market.  You can have a really unhealthy meal just about anywhere as well.
u do have a point, ur right. i could chose foods that would be low calorie and low in fat, even at fast food places... i guess i just make the wrong choices, cuz they taste better, but arent so good for me...Just had my lunch which was curried pumpkin soup to which I added some coconut cream, along with cilantro/coriander. A BIG piece of naan bread on the side. Now have 3 tamarillos to polish off and its kind of sad winter is ending..Im gonna miss my tam sandwiches! We still haven't made any... perhaps today.  Though I really don't want to turn on the oven when it's 90+ degrees outside. 
I've had the windows open all week, temps are down.  I'm resisting the impulse to bake cookies.  It's supposed to be warmer today and next week and maybe I won't be in the mood to bake.  Lindy
