Southwestern Veggie Soup | Arthritis Information

I had bought an eggplant that I needed to cook so last night I put together a soup that turned out really good. If you like things with a little bit of a kick, and are looking for healthy recipes, this is one you will enjoy.

1/4 cup chopped yellow onion

5 green onions

1 carrot or 6 baby carrots

1 beef boullion cube or packet

1 tsp ea of salt, garlic powder, and black pepper (approx)

1/2 tsp of chili powder

1/2 tsp of cajun seasoning if you like that kinda stuff

1 can of diced tomatos with chipotle seasoning

1/2 to 1 can of creamed corn

3 cups of cut eggplant (approx 1 small or 3/4 large eggplant)

(what I didnt use but might have if I had it...some celery and half a can of black beans)

put a little oil in the bottom of your stockpot ( I use olive oil ) and saute' the green and yellow onions, adding in the carrots.(this would be the point at which to also add celery if you want)  Reduce the heat to medium and add in the tomatos, corn and about 3 cans of hot water. Add in the bouillion, salt, pepper, garlic powder, chili powder, and if desired the cajun seasoning.(Black beans could come in here) Stir and bring to a boil, add in the Eggplant and simmer for about 10 min. untill the eggplant is cooked through.

Thats it...really simple. It is a spicey, healthy, easy soup.

One of the great things about eggplant is that is takes the taste of whatever you cook it in, it is good for you, and really adds a lot of consistancy to soups and other meals.

I had some eggplant left over before I put it in the soup so I sliced it and sprayed the foreman grill with pam butter spray. I tossed the slices on and sprinkled with salt, pepper and garlic. It only takes a few minutes and they are delicious. I even layered some of the eggplant on my tuna/apple salad on toast sandwhich. Yummy!

 

Mmmmm... sound delish!!  My tummy couldn't handle the spices, but the rest sounds wonderful.  Thanks for sharing Oh my god I don't even know if I like eggplant and that sounds GREAT.....lol Thanks!!!

Vicki, you can cut back on the pepper and eliminate the cajun spice...it is not jalepeno hot or anything...just enough to make you feel warm.

A study has just been released where almost 1000 women were involved. The results showed a dramatic increase in breast cancer in those who consumed red meat on a regular basis. Something to think about! There are so many substitutes out there...ground turkey, veggie meat, tofu, eggplant and other hearty veggies....
