So anyone with Kids will love this, and anyone who just never grew up will too. LOL I came across it accidentally in one of my 30minute or less recipe books.

You basically take about 2 cups of cheese crackers - like Cheeze Its, dump them in a bag and add some pepper - I used a pepper blend, a pre-made kind walmart sells - take a rolling pin to the bag to crush all the crackers as fine as you can get them. Some chunks are okay, but the smaller the better.

Cut chicken breasts into 1/2in or 1in thick strips, and pat them dry. Dip the chicken strips in milk, and then put them in the bag of cracker crumbs. Shake it up really good then lay the chicken strips out on a cooking oil sprayed pan.

Bake for about 5-7 minutes or until the chicken isn't pink, at 400 degrees.

THEY ARE SOOOOOOOOOOOOOOOO good!!! It sounds insane to me, but I loved it!

That sounds soooooo yummy, I think I'll have to try that.  Easy fix too - nice with a salad.  Any more easies like that in your book Katie??  Always good to have something different that doesn't involve too much preparation.  Try my Impossible Pie - good for leftovers.

3 eggs:  Half cup S.R. Flour: 1 Cup grated cheese: 1 chopped onion

1 tbsp oil: 300 mls milk: 2 cups mixed veges. Salt & Pepper.

Mix all thoroughly together - pour into greased dish. Bake 30-45 minutes at 350 deg.

Use left-over veges, frozen veges, ham, bacon, cooked chicken, chunky tinned salmon or smoked fish nice too.  Whatever you fancy!
