Ok, I have been diagnosed with lots of things only to have them "undiagnosed".  RA is here to stay but they found it to be extremely mild and my sickness wasn't actually from it.

My symptoms as some have known here for some time included muscle swelling, sickness feeling, messed up stomach etc.

Well....... I got sick and boy did I get sick.

I ate some fish sticks and instantly was throwing up, had diarea etc. and it got worse and worse and worse over 3 weeks time.

I finally went to the doctor only to find...... and get this..... I can't eat wheat products or dairy!

These things are what's causing my horrible swelling from nasal passage to tops of my feet.

So, my husband (our cook) has to find anything he can think of to cook (which isn't much) since most things contain wheat and gluten or dairy so he has to make his own sauces etc.  Pretty good at it too.  Right now he is inventing his own sweet and sour chicken with friend rice which smells "yummy".

Now, i don't have a wheat or dair "allergy" i have an intollerance.  I don't have "celiac" but still have a wheat intollerance which means i might be able to take oats etc. just no wheat at all.

Anyway, thought I would give an update, this has been a long couple years at trying to figure all tihs out.  If it wasn't for the diarea, I wouldn't know.

I also took some poo tests (three small jars one large, took 2 days lol) and should get the results tomorrow.  He wanted to make sure i wasn't bleeding in my intestines and wanted to make sure no stomach cancer was present.

Good to hear that Doc has been able to isolate this intolerance for you.   You're blessed that your hubby is a creative cook!!  I hope that you quickly start to feel the benefits of eliminating those things that disagree with you. 

Speaking of eliminating, it must have been quite a "job" filling up your jars!  Please update us as you go along. I have been wondering if this is part of
my problem too. I know the dairy but I question the gluten. This will be
interesting. Maybe we all need to brainstorm some very creative recipes for
your husband.how did they test you for a wheat allergy?? My aunt insists that Kelsay has a wheat allergyYou may have to skip oats too.  They don't contain gluten, but they are harvested, transported and processed with the same equipment as wheat and other  gluten-grains like rye and barley.  This opens up the possibility of cross-contamination.  My husband has celiac. 

There are many great gluten-free cookbooks out there.  Probably the best author to start with is Bette Hagman.

There are plenty of gluten-free options out there ... and most of them quite tasty!  Look for rice pasta ... good as the wheat stuff.

Oh, and while you may not have celiac, you might be interested that many with it are also lactose-intolerant.

When my daughter was 5 they diagnosed her with several food allergies (there is a blood test for food allergies, more expensive but will narrow down which foods).  She was allergic to wheat, rice, rye, barley, potatoes, strawberries, bananas, oranges, milk, chocolate etc.  Talk about being tough to cook for.  This was 10 years ago and there wasn't as much choice in other foods to use.  Many of the mild substitutes contain rice milk as it is sweet, so those were out.  I used oatflour to make her "pizzas" and almond cheese. 

I got really good at reading labels and the kid ate a lot of meat and veggies.  We did our best to eliminate these foods, but she sneaked a roll or potato chip once in a while.  The problems they caused were bizarre, Wheat and potatoes made urinate frequently, chocolate and strawberries caused hive, and other caused headaches and fatigue. 

She was retested at 12 and had outgrown most of her allergies, though she is sensitive to some still.  People are luckier now with so many alternative food out there.  But you do learn to be a creative cook!
