Hi ya'll... i dont know how many other people are heavily into dietary experimentation, but I track a log on how i feel in relation to what I eat.
I wanted to let you know that Its been 3 weeks on a vegetarian, dairy free, minimally processed celiac (gluten-wheat free) diet..

iknow that sounds restrictive.. but its really not.

and I am down to 4mgs prednisone

i have also had enough energy to exercise daily.. and the inflammation has seemed to be reduced significantly..

here are my meds

4mgs prednisone (down from 10)
2 naproxen (off of vicadin)
and i havent had enbrel in 2 weeks
15mg MTX down from 20


i have been frying up a lot of tofu and kale, and making gluten free pizza w/soy cheese and cookies with rice flour

That's awesome that you're feeling so much better and have been able to start decreasing your meds! I've thought about trying a similar type of diet, but by the time I get home from work, I just don't have the energy to prepare and cook a meal. That, and I don't think I'm in the right mind frame right now to make that kind of a dietary change. But I am THINKING about it!  :)

ive been on this diet for a long time (hubby and daughter cant eat gluten dairy or eggs) but we do eat chicken and fish.   its difficult to say how good it is for me because i cant remeber clearly what it was like not to eat like this. 

Ive got so used to the soya milk now that i find cows milk really disgusting.  by accident someone gave my daughter something with butter in it a couple of weeks ago and she vomitted.... arrrh

Also, i think if you want to aim for perfection!!! i think you need to cut out all black tea and coffee and only drink herbal teas and filtered water but i have problems with this.

also i want to start a string for gluten and dairy free recipes but havent got tme at the moment.

I never really thought too much about the coffee, I drink one cup daily, but that caffeine really isnt too good
the most common and cheap thing I make that is allergy free but has good protein is tofu scramble (not from a box)

xtra firm light tofu
1 large onione
1 tbspn of olive oil
1 tblspn of dried diced garlic
good splash of soy sauce
1-2 tablspoon of indian curry powder
as much kale or collard greens as desired

fry until tofu is relatively brown, and the kale is soft
tastes good
